CARROT CAKE 1 1/2 cups oil 2 cups sugar 4 eggs 1 tsp. vanilla 2 3/4 cups flour 1 tsp. salt 1 tbsp. baking powder 1 tbsp. baking soda 1 tbsp. cinnamon 1 1/2 cups chopped walnuts 4 cups grated carrots Combine oil, sugar, eggs and vanilla. Beat well. In another bowl, combine dry ingredients. Add to liquid and mix well. Add carrots and nuts. Mix well. Put in greased 9x13" pan. Bake at 350F for one hour or until inserted toothpick comes out clean. Top with cream cheese icing. CREAM CHEESE ICING 8 ounces Philadelphia cream cheese 4 tbsp. butter 2 1/2 cups icing sugar 2 tsp. vanilla Soften cheese and butter. Beat well. Add sugar and vanilla. Beat again. Spread on cooled cake.
