COCONUT CREAM PIE 1 pkg. Vanilla Pudding (the kind you cook, not instant) 1 tsp. gelatin 2 1/3 cups milk 1/2 cup whipping cream Dash of salt 1/2 tsp. coconut extract 1/2 cup coconut Baked 9" pie shell Combine Vanilla Pudding mix and gelatin in a saucepan. Gradually add milk. Blend well. Stir over medium heat until mixture comes to a full boil. Cool, stirring occasionally. In a bowl, combine cream and flavoring. Beat until thick and glossy. Fold into cooled filling, then fold in coconut. Pour mixture into cooked pie shell. If desired, top with sweetened whipped cream. Chill until firm.
