FRUIT PIZZA *MAKES 2 PIES* Shortbread: 1 1/2 cups butter 3/4 cup sugar 3 3/4 cups flour Cream butter and sugar until fluffy. Stir in flour, kneading well. Press into pizza pan, prick with fork. Bake 30 minutes at 300F. Filling: 12 ounces cream cheese 2 large containers Cool Whip Mix until smooth and spread over cooled shortbread. Place sliced fruit (strawberries, kiwis, bananas, etc.) on top of filling. Glaze: 1 cup sugar Dash salt 2 tbsp. cornstarch 1 cup orange juice 4 tbsp. lemon juice 1/2 cup water 1 tsp. grated orange rind (optional) Dash of Gran Marnier (optional) Stir first three ingredients in saucepan. Stir in juice and water. Bring to boil for one minute. Remove from heat. Stir in peel and liqueur. Cool before spreading on fruit. Refrigerate.
