FIESTA FRUITCAKE 1 cup candied pineapple, cut in chunks 1 cup red and green glace cherries 3 cups shelled Brazil nuts 1 cup all-purpose flour 1 cup sugar 1 tsp. baking powder 1/4 tsp. salt 4 eggs 1 tsp. vanilla or rum flavoring Line two 9x5" pans with foil and grease well. Mix fruit and nuts in a large bowl. Sift flour, sugar, baking powder and salt together. Add to fruit and nuts. Beat eggs well; stir in flavoring. Add egg mixture to floured fruit and nuts. Mix well. Spoon into pans. Bake at 350F for 1 hour. Cool in pans for 10 minutes, then remove from pans and cool on wire racks. When cool, wrap tightly in foil or plastic wrap. 2 loaves.
