LEMON ICE BOX COOKIES 1 cup butter or margarine, softened 3/4 cup granulated sugar 2 eggs 1 tbsp. grated lemon rind 3 cups all purpose flour 1/2 tsp. baking powder 1/4 tsp. salt Cream butter and sugar together well. Beat in eggs, one at a time. Add lemon rind. Stir flour, baking powder and salt together and mix in. Shape into rolls about 2" in diameter. Wrap and chill overnight. Dough may also be frozen. Next day slice thinly and place on ungreased cookie sheets. Bake in 375F oven for 7 to 10 minutes. Makes about 5 dozen. GLAZE Mix 1/2 cup icing sugar with enough lemon juice to make a barely pourable glaze. Add yellow food coloring if desired. Spread on cookies.
