RICE PILAF 1 1/2 cups uncooked long grain rice (NOT MINUTE RICE) 1/4 cup finely chopped onion 3 tbs. butter or margarine 1- 13 3/4 oz. can chicken broth 1 cup water 1/2 tsp. salt In 10" skillet, cook rice and chopped onion in butter until rice is golden, stirring often. Add chicken broth, water and salt. Bring to boiling. Reduce heat. Cover and simmer until rice is tender, about 15 minutes. Fluff up with a fork. Add some parsley flakes and toss. Serves about 8.
